Abstract

In this paper, a process for production of whey hydroysates and bioactive peptides is presented. Whey protein concentrate was hydrolysed by using bacterial protease Proteinase K. After ultrafiltration of hydrolysates through three molecular cut-off membrane (30 kDa, 10 kDa and 3 kDa) bioactive peptides were obtained. Presented results indicate that hydrolysate produced under these conditions could be an effective nutraceutical and utilized in food industry.
